The piece or a piece of paper?

Hi. I was looking at the definition for the word "bill" in the Cambridge English Dictionary online and it had this definition:

a request for payment of money owed, or the piece of paper on which it is written

Can we use the phrase "a piece of paper" instead of "the piece of paper" there?
