the one or that?

what is the difference between "that" and "the one" (or "those" and "the ones") when you try to avoid repeaing a countable noun?
Which is right in the examples below?

E.g.
The temperature here is higher than (that/the one) in the U.K.

Our brains are different from (those/the ones) of our ancestors.

"the one(s)" is awkard in your examples. Use "that"/"those" instead.

In Britain we normally write "the UK" and not "the U.K.". It may be that the latter is more common in American English.
