The omission of the repeated words

He was very hungry, so even ate cockroaches.
He was very hungry, but couldn't bear to eat cockroaches.

I'd like to know I can omit the repeated words in "so" or "but" clauses.
Thank you in advance for your help.

The first sentence is possible, but I would say He was very hungry, so he even ate cockroaches. The second sentence looks fine as written, although you could include the second he if you wished.

In my view the first sentence is invalid. Although there are some quack cures that involve the eating of cockroaches, no human would eat a cockroach, no matter how hungry he was.

It's said that the difference between "won't eat it" and "will eat it" is one more day without food.

No, these won't work. You would need to say:
3. Because he was very hungry, he even ate the cockroaches.
4. He even ate the cockroaches, for he was very hungry.
