Which of the following is (are) correct?
#1. The thing I'd be the most curious about is finding someone my age.
#2. The most thing I'd be curious about is finding someone my age.
#3. The thing I'd be curious about the most is finding someone my age.

I meant to say if I travelled, the thing I would be the most curious about is meeting people my age.

You probably want 'interested in' , not 'curious about'. You can use 'most' without 'the'.
