In this episode of Friends, Rachel has lied to her father about her upcoming marriage to Ross, and wants Phoebe to go along with this, pretending to her father that there is a wedding, and that of course she will be attending. Phoebe is the "nice one" in the series, never wishing to be rude to people, so she doesn't refuse outright to back up Rachel's lie. Instead, she gives equally fictitious reasons why she is unable to attend the "wedding". Unicorns and leprechauns are mythical (and so not real, just as Rachel's wedding is not real), and Phoebe says, "I'd like to attend your imaginary wedding; but I'm really busy that day. I have a unicorn baptism and a leprechaun Bar Mitzvah." There is no wedding, and similarly, mythical creatures to do not have baptisms or Bar Mitzvahs (a Jewish ceremony marking the occasion at 13 years of age when a boy is regarded as mature enough to observe the religious principles of Judaism, and take part in public worship at the synagogue.) She is being sarcastic, but in a "nice" way, typical of Phoebe.
