The meaning of " You not do so" ?

Please look at this sentence.
"some tourists were taking photos of the artwork on show in spite of the guide's request that they not do so."

For they not do so in this sentence,
Since "not" is a adverb, I think we can put it between a subject and a verb. Simply I think it is a right sentence.

The thing that I'm curious about is why they use it like that.
Is "they not do so" the same as "they don't so" ? Right ?
Could you a little bit more explain me for its meaning ?
