Why land in general wouldn't go with "the", but sea and sun do?

It could if you were writing about one, particular land. You would also need to establish which one, before using that wording.

I don't know what you mean. Here are lots of examples of "the land."

The land was fertile and productive.
We bought the land on which we will build our dream house.
He looked far across the surrounding land from his location on a high ridge.
