(the) entire German history

In English, generally we don't use THE for history:

eg an interesting period in Egyptian history

but when there is OF, we must use THE:

eg the worst disaster in the history of space travel

But how about: (the) entire German history?

There is no OF, but ENTIRE seems to refer to a definite thing, so I am not sure; could you help me?

Do they have to learn the Japanese history?

(In this case, THE is used to refer to a particular stretch of the history of that country)

The Japanese history (OF THE MEIJI RESTORATION PERIOD), the bracketed thing being elliptical?

It is not a matter of your mind; it is a matter of the actual context of the sentences. If you put it into a nice paragraph, then it will probably work.
