"The" duck is a bird?

Hi there,

Recently, I've seen some sentences like, "The duck is a bird." and "The camel is the ship of the desert."

However, when it comes to human beings, a sentence would be "Man is immortal."

Why do we use "the" for animals that have a characteristic while for human we don't need an article? Why don't we say "Duck is a bird." or "Camel is the ship of the desert." instead?

Thank you!
