What is the difference for example between I would like to do smth & I would do smth?

If you say "would like to", it means you would find it pleasant to do it. You want to do it.
But if you say just "would", it doesn't matter if you would find it pleasant or unpleasant. Maybe you don't want to do it; maybe you have to do it.
