When we eat colorful fruits and vegetables, the color/coloring chemicals protect us, too.

Do both color and coloring fit in the above and mean about the same to you? Thanks.

To be honest, the phraseology sounds awkward (I would have expected 'the colorants ') but coloring is OK. Color does not sound good.
