1. Sometimes they are threatened by "the" blurring of roles brought about by working together.
2. Sometimes they are threatened by blurring of roles ....

Are these both correct? Do they mean the same only separated by the 'the'?

Can you explain further why it is un-natural? How is the 'the' working here to make it unnatural?

The + v-ing refers to a specific event or action:

We are planning to watch the running of the marathon.
We saw the unveiling of the new sculpture.
The breaking of bread and (the) drinking of wine is an important ritual in Christian churches.
We came into the room just as the judging of the quilts was about to begin.

Is "am doing cleaning" a catenative verb phrase? In other words, is "cleaning" a part of the catenative verb structure or is it an object of the verb "doing"?

The definite article is not used with the gerund after certain catenative verbs, such as remember.
But, in certain (rare) cases, we do add the definite article.

I remember closing and locking the door, but I don't remember what happened later. (Common)

I haven't grasped your answer well.
To go simple, can I ask you the same question: so, you think 'the' is necessary in the sentence of 'I am watch the jelly-making'? Is it?
Then, can you also tell me the meaning of the same sentence without 'the', if anybody uses it? Or would simply consider it wrong?
