the animals characteristic of a region, period, or special...

fauna
animal life; especially
: the animals characteristic of a region, period, or special environment
[M-W's Col. Dic.]

I couldn't understand the red text above. It seems to me as if something had been omitted from between animals and characteristic.

Couldn't it be written as: the animals which are characteristic...?

Hi, Yes, it could. It's not written as a full sentence. It's written in abbreviated or point form, becuase full sentences would make the dictionary a very thick book.
