That/which

1.I have found the pen which I lost.
2.I have lost the watch that you gave me.
I read these two sentences in a book and I am confused why "which" is used in the first sentence and "that" in the second even though both these sentences have similar structure?

Both relative clauses are restrictive/defining. Both which and that are correct. If the relative pronoun is an object - as it is your sentences - it can be left out:

I have found the pen [that/which] I lost.
I have lost the watch [that/which] you gave me.
