I found this sentence:

"That's would make the ceremony more enjoyable."

I think "That's" should be "That".
Am I correct?

I think "That's" should be "That". Yes, you could certainly say 'that'.

Or perhaps the writer meant something else, eg
"That's what would make the ceremony more enjoyable."

The context would likely make the intended meaning very clear.
