How long we can be late before being impolite, what topics we should avoid in a conversation, how we show interest or attention through listening behavior, what we consider beautiful or ugly — these are all aspects of culture that we learn and use without being aware of it.

What does 'that' above refer to? 'All the aspects (of culture)' or 'culture' alone? And about the last 'it' in bold, what does it refer to? 'Culture' or something else?

Clive As written, it refers to 'culture'. But I was expecting the sentence to end with 'them' (ie aspects).
Yes, that's why I was a bit confused.
