Can you please explain if "that thing" has any meaning than just "thing"?

The speaker is a preacher...

"That" is used to specify the word "thing." You would need an article (a, the) or a word like "some" before "thing" anyway. You couldn't just delete "that." I would delete the second "that" in the sentence.
