'That is two scoops'. Is this correct?

I was buying some ice creams today
And the girl at the counter told me, that is your two scoops.

I didn't dare to ask her if what she said was grammatically correct, so I decided to do it here!

Is it correct to say 'That is your two scoops,'?

I believe it should be, based on the little knowledge of grammar I have, 'These are your two scoops,', but I also think the former simply sounds more natural and like something a native would say.

Also, one more thing; 'Here is your order, which ____ a banana, an apple and a pear.
If you had to put in one of the two words 'is' and 'are', what would you put in there?

Thanks in advance.

If you had to put in one of the two words 'is' and 'are', what would you put in there? I'd use "includes".
