"that" and "so"

I got a question.
When can I use "that" instead of "so"

For example: It wasn't that easy. (It wasn't so easy) /
But you can't say "I'm that lucky", can you? (Wouldn't it be: I'm so lucky, or, I'm very lucky?) So are there any rules when I can use both? Or is that just a question of the feel for language (because I'm not a main English speaker, I'm learning Emotion: smile )
