I have checked with and am fully satisfied with the above maintenance and that the said maintenance has not adversely affected any computer(s).....

What is the purpose of "that" here? Can i just write "and the said maintenance has not......"?

What is the purpose of "that" here? It makes the latter part of the sentence into a subordinate noun-clause which is the object of 'satisfied', ie . . . . I am satisfied ..... that the maintenance has not affected ....

Can i just write "and the said maintenance has not......"? Yes, but now it becomes another main clause, joined by the conjunction 'and', ie I have checked ...and I am satisfied ... and the maintenance has not ...'

I don't think this sentence is carefully written. You can't check with maintenance, the 'with' seems out of place. Also, the final noun clause is positioned as the object of both 'checked with' and 'satisfied with', and doesn't fit at well with the former. The sentence is too crowded and busy. I'd write something simpler, like

I have checked the above maintenance, and am fully satisfied with it. The said maintenance has not adversely affected any computer(s).....
