I am writing a thank you letter to a friend and would like to know the proper opening line...."Thank you for spending time with John and myself on June 16 discussing..." or "Thank you for spending time with John and I on June 16th..."

I guess the correct form is "Thank you for spending time with John and I on June 16th..." or, informally speaking, "Thank you for spending time with me and John on June 16th...".
It's better to use "myself" in a sentence when you want to express you are the direct responsible for the action, since this pronoun gives the idea of something "reflexive" to others.
