Is "I" right there over "me" for a moral formal way of saying it?

All right, thanks. Does that apply to other subject pronouns as well? I know it does for "he" and "she," and I'm pretty sure "than they" is right, but what about "than we"? For example: "You could do a better job than we." That sounds wrong to me. Or is that simply because it's rarely used that way but rather "us."

That’s correct, too, but it sounds ridiculous for the reason you gave. If I wanted to use a subject pronoun, I would do this: You could do a better job than I/we/he/she/they could.
