I've never heard any term other than "grad/graduate student". You can be more specific: Master's candidate, PhD candidate, postdoc, etc.

The scenario was in an academic office where my friend had to write a document indicating the applied student's status was in his first year of graduate school.

So, I was wondering if there's a term for that. Is it safe to say "a first grader of so-and-so graduate school" or "first year in graduate school?"

'Grade' is for primary (and sometimes secondary) school only, which together are grades 1 through 12 or 13. Tertiary education is in 'years' only: 'his first year of graduate school' is correct.
