Can I write sentences like these with or without the continuous tense? Are both the versions grammatically correct?

1. a) She saw her mom step forward, ready to explain everything.
b) She saw her mom stepping forward, ready to explain everything.

2. a) He parked the car and watched the clouds roll in.
