Is this sentence grammatical and correct? I feel it isn’t.
Tenderness is a quality of meat gauging how easily it is chewed or cut.

I guess technically it is correct, but to me it feels awkward. I would prefer: Tenderness is a quality of meat that gauges how easily it is chewed or cut.
