Welcome to English Forums. I don't know that expression, but "seated" is the participle, and that's what is used to form the passive. Does that mean they put two new parties in your section at the same time?

A double sitting to me is when they use the table twice (turn over the table). Top restaurants tend not to double book tables but sometimes it happens.
