Talking of behaviour/habits with will/would

Hello!
Could you help me, please?

My grammar book says that we can talk about characteristic behaviours or habits using 'will' for the present and 'would' for the past.

I'd like to understand the sentences below, which were given as the only correct versions:

1) "Many people today would give a lot to live the life I had in those days.

Why is 'would' used here if we're talking about people today?

2) "I find it sad to think that most of the children I taught probably won't/wouldn't remember me now."

Why are the both ways correct?
