What does it mean " talk turkey " or" talk shop" ?

"To talk turkey" is "to speak in plain terms, without euphemism or prevarication".

"To talk shop" is "to talk about matters that relate to your line of work when you are not at work".

So if you go to a dinner party with a colleague from work, and spend the whole evening discussing a project you're working on, you're "talking shop".
