Take down

People often say 'take down a video/ site/ servers etc.' What exactly it means in this context? For example, delete the site completely or just temporarily disable it. I couldn't find the explanation in the dictionaries.

It means to put the site (or content) out of service, by whatever means, so that people can no longer connect to it. Whether this is temporary or permanent depends on context, but most often it would be intended as permanent.
