She's always taking care of business that isn't her business to take care of.
She's always mind business that isn't her to mind.

The first one is not too bad, but note:

She's always taking care of business that (it) isn't her business to take care of. (I'd include the 'it', but you don't have to.)
She's always minding business that isn't hers to mind.
