SV Agreement with Modified Gerund(s)

In biology, there's what we call biochemical signaling and hormonal signaling. But which is correct?

Biochemical and hormonal signaling of metabolism was sensitive to increasing severity of iron deficiency.

or

Biochemical and hormonal signaling of metabolism were sensitive to increasing severity of iron deficiency.

or

Biochemical and hormonal signalings of metabolism were sensitive to increasing severity of iron deficiency.

I too have the same problem in sentences like this...Hope language experts can shed some light on this.

Probably the reason in the above sentence is that "Signaling" is not a countable noun and hence cannot be made plural by adding "s". So the last option is taken out. The problem now is between the first two; is it OK to use "were" with uncountable nouns such as this (as here "signaling" actually refers to both "biochemical signaling" and "hormonal signaling") or should it be strictly "was"?
