It was one of the best, if not the best sushi I've ever had. Or

It was one of the best, if not the best sushi I had ever had.

Talking about the sushi restaurant I went to last week.

It was some of the best, if not the best, sushi I've ever had.

The past perfect seems to leave open the possibility that you've since had better sushi.

By the way, have you tried eel sushi? Amazing stuff!

As a matter of fact, I have had eel sushi. I think it's called unagi in Japanese, and it sure is delicious!
