I'm confused with your last two sentences. They seemed to urn into each other. How about another phrasing as written.

Instead, they hope I will choose another career in science or engineering. (or "in the science or engineering field")

I gave two ways of saying it as I wasn't quite sure of what you were wanting to say.

Now that you have cleared it up, I would suggest using my first sentence - Instead, they hope I choose another career of the science and engineering category or, your sentence - Instead, they hope I will choose another career in science or engineering. as it now sounds correct
