Appert's jars worked well because of the method used to seal them. Each jar was filled with food and a small air space was left at the top. I think that before the blank, there should be a 'a' (an) because otherwise it would not be grammatically correct. Assuming that there is a 'a' (an) I think the answer would be 'exit' or 'exclusion'. What do you think about this?
