sum or amount, plural or singular. new concept English 3.14

There was a time when the owners of shops and businesses in Chicago had to pay large sums of money to gangsters in return for 'protection'.

Why here "sum" are used as plural? Can it's singular form 'sum' be used here?
And if replace 'sums' as amount, is it correct?

"a sum" can work as correct syntax, but may change the meaning.

Yes, but as "a large amount" unless you use the plural.
