For the issue of when to hyphenate and when not, pick a dictionary and stick with it. If you look this up on www.m-w.com, you'll see that "sugarcoated" is one word, closed compound, no hyphen. Other dictionaries may list it otherwise - that's why you should pick one and make that "your" source.
