Does your answer key say that "the" is correct?
A: Have you ever tried Thai cuisine before?
B: Yes, I'm particularly fond of the type of food.

But you prefer:
A: Have you ever tried Thai cuisine before?
B: Yes, I'm particularly fond of such type of food.

However, as Ivanhr stated, the only correct answer is "B" (that).
A: Have you ever tried Thai cuisine before?

I misread the answer key of my book.
It says the answer is (b).
Anyway, I thought "such" is the answer.
Now I think "that" is the one as you said.
But I still don't know why "such" can't be the answer.
