substittue or substitution or else?

Hi,

I am experimenting some ingredients for my sushi. If I add tuna fish instead of ham. Can I say," for this particular roll of sushi, we add tuna fish in replacement of ham." Is that a correct phrase? Or can I say," we replace ham with tuna fish?"
