Since 'most' is the determiner that goes with a non-count or plural noun , the verb is 'is'. Am I right, here?

"Most of my knowledge is based on my experiences." Here <most> is a noun.
"Most grammar knowledge is of no use in conversation." Here <most> is an adjective.

Right answer for the wrong reason!

That "most" is a determiner and that "most" goes with this or that type of noun is not the reason that "is" is the correct verb.
The verb agrees in number with the noun phrase after "most of". (The same is true of "a lot of", "the rest of", "all of".)

Most of the bread is spoiled.
Most of the children are healthy.
