I'd say that the single word subject of the sentence is 'What'. It is part of a dependent clause, 'What the man did'. From that, we understand that 'What' refers to the man's behaviour on this occasion.
Or some might say that 'What the man did' is a noun phrase and, as a whole, it forms the subject of the sentence.
