Sometime, we write a dialogue like this:
"the woman is beautiful, " said Tom",

so , can we say "Tom" is the subject?

so if i have a question asking "what is the subject in the sentence "'The woman is beautiful,' said Tom, a student at AAA." " , the answer should be "Tom, a student at AAA" ?

You need an ESL teacher for this question, and I am not one.

You want to be ready for such a test question. I think that such a test question would not be fair because of the grammatical complexity of apposition, but if I had to answer the question "What is the subject of the sentence?", I would put just "Tom" because he is mentioned first, not parenthetically.
