Students will write to strengthen one's voice or their voice?

I have a sentence I'm working on, and I'm not sure of the correct way the plural subject should be used with a reference later on in the sentence. Does one write the following:
"Students will compose pieces of writing to practice and strengthen [one's] or [their] voice? Is student considered a collective noun or not? I'm confused as to how to write this according to conventions, and I'd like to be able to explain my thinking to others. Can you help?
