Strange sentence structure


She extended a hand the color of cream.
How should I analyze this sentence structure? It appears that "the color of cream" modifies "a hand but it looks very rare and weird to me.

Is this kind of omission rare to happen? I've never come across sentences omitting relative pronoun and copula at once when the complement is a noun.
