Stop -n- shop

a company I'm working with has "stop -n- shop" on their sign, should it be "stop'n shop"?

The apostrophe is a marker for missing letters. The middle word is missing a letter at the beginning and the end.
Perhaps they use the hyphen because it's more visible.
