Stodgy

Hi

Modern science even tries to convince us that this

is true of living beings too. It tells us that we are nothing more than inert physical

matter. We’re made up of chemicals and particles which are inanimate in

themselves, but which work together in such an amazingly intricate and complex

way that they create the illusion that we are “animate,” and give us the ability to

interact with our environment and to be conscious of the world around us. Even

our own consciousness is just a product of the stodgy grey matter of our brain, a

kind of illusion created by the buzzing of millions of neurons.

What does "stodgy" mean here?
