O'Reilly says that means kids who might be tempted to drop a subject they're finding hard, perhaps maths, might stick at it when they discover it's critical to becoming an engineer.

What does "stick at it" mean here?

Those are opposites. When you are working on something, you can stick at/to it or you can drop it. (continue or discontinue work on it)
