"I'd have to stereotype the person first"

Hi, I looked up the word, "stereotype" in dictionaries

Verb: To make a stereotype of

Noun: A conventional, formulaic, and oversimplified conception, opinion, or image.
: One that is regarded as embodying or conforming to a set image or type.

But their definitions seem way too complex for my level of english. What does it mean exactly?
