Hello, I found this sentence: It was the summer your mother was staying with us. Could also the past simple be used in this sentence? It was the summer your mother stayed with us?

And how about this sentence? During the last summer we stayed in a beautiful hotel in Spain. Would it also be correct to say During the last summer we were staying in a beautiful hotel in Spain?

We'd probably say, "Last summer we stayed/were staying etc."
"During the previous summer" would work.
