She was interested in the stand manned by the University of Tasmania.

I agree. It could be avoided by using a word that is less associated with the male gender. [This isn't a problem in some social situations.]

"staffed" is the obvious one that comes to mind (though, as it happens, "stand staffed" is not the most euphonic combination either). You could also use "run" or "belonging to", or avoid the issue altogether by saying "She was interested in the University of Tasmania('s) stand."

Staffed is the non-gender-specific word I was trying to think of. Still, I think Wordy's other solution is the best.
