Peaceblinkfriend"staffed" is the obvious one that comes to mind (though, as it happens, "stand staffed" is not the most euphonic combination either). You could also use "run" or "belonging to", or avoid the issue altogether by saying "She was interested in the University of Tasmania('s) stand."
