It seems to me that it makes more sense to say 'She is an outstanding athlete'.

That's taking political correctness a bit too far, Rover. After all, the *** of the subject is clearly indicated by the use of the 3rd person singular feminine pronoun "she", so "sportswoman" seems quite acceptable.
